This episode
continues the events from the last one. Shell challenges Mao
to a siu mai competition. After being blown away by the
originality and creative thinking Mao placed in his three-egg siu mai,
Shell was eager to see Mao's true talent in action. Shell then
unwraps the the large large bundle, which turns out to be a black
steel stick!
Several golden stars are stuck to the hilt of the steel
stick. Shilou deduces that these stars symbolize the many
chefs Shell has challenged and defeated. Shell confirms that
each star represents a great chef: Chef Chao of Yang Lou Yan in
Shanxi, Shu of the Beijing Moonlight Restaurant, Tenko of the Spring
Time Restaurant in Yunnan... and many others. Shell has
chellenged them and won every time.
At this, Mao grew more and more excited. He wants to
challenge Shell and see the man's talent for himself. But he
remembered that Yosen Restaurant was placed in his care by Chouyu
and Luo. After some persuasion by Shilou and Mei Li, and
despite the taunts of Shell, Mao reluctantly refused.
Shell refuses to take "no" for an answer. He
starts smashing the furniture, destroying the tables, and twirls his
stick in order to calm himself down. Shell's violent rotation
sucked in vases and destroyed the lighting. Through the
maelstrom, Mao admires Shell's ability to handle the heavy stick
easily. His curiosity and pride soon got the better of
him. After muttering silent apologies to Chouyu and Luo,
Mao accepted Shell's challenge.
Shell is ecstatic, and immediately stops his rotation. Mei
Li asks Mao to reconsider - after all, such an action might get him
fired. Before Mao could answer, Luo and Chouyu entered the
room. There was nothing wrong after all by challenging Shell,
and the restaurant's honor will not be tarnished by such an act.
Shell finds the dialogue amusing, and is pleased to meet the
famous Master Luo and Chouyu. Luo himself has heard of Shell,
the genius of Chinese dimsum from Shanxi Province, and tells the
group that Shell is an extremely talented dimsum chef. Shell
brings the stick down to Luo's face, and asks him to be the judge of
the competition.
Luo accepts, although he warned Shell that he may be partial
towards Mao. That doesn't matter to Shell, who told Luo that
he would win regardless of any partiality. The group go into
the kitchen, and Luo lays down the rules - Shell and Mao must make siu mai
enough for 50 people, within a time limit of 2 hours. Both
accept.

As Shilou and Mao knead the dough, Mao
explains that shells for dumplings and siu mai are different.
Dumpling shells function like a leather bag, keeping the filling inside,
while siu mai shells are more delicate, much like a silk
dress. Shell starts off by
punching the dough with both hands, cutting the dough strips at very
quick speed into little slices, and finally rolling these into small
balls. After lining up the dough balls on the table, Shell
removes his clothing, takes his steel stick, and places it on top of
the balls. He
concentrates, flips upside down on the stick, and starts
rotating. Shell disappeared into a hurricane like blur, and
moves slowly across the table while rotating. When the last
ball is flattened by his move, Shell stops spinning, and jumps off
the table with the finesse of an acrobat. Mao
counters with a spinning move of his own. He places the wad of
dough on his fingers and spins it. To everybody's surprise,
the spinning expands the dough and created a soft and delicate
dough, with the same quality as Shell's, but with much less
effort.

Shell marvels that
the boy could think up something this creative - using centrifugal
force to knead the dough. This was something new created out
of the ordinary, but Shell believes that he will still win. He
takes out some Kinka pork from the pantry, detaches his stick into
two pieces, and starts mincing the pork violently while laughing
like a maniac.
Mao watches Shell's technique, and resolves
that he won't lose to Shell. He goes into the pantry and
selects some pork, shrimp, vegetable greens, and eggs. The two
rivals continue to battle while a crowd is gathering outside Yosen Restaurant.
As Mao places the siu mai into steamers and
starts heating them, Shell announces that he has finished. He
invites Luo to sample his siu mai, and uses his stick to lift the
steamer lid. A glow surrounds the kitchen and bursts out from
the restaurant into the surrounding area. Through the glare,
Mao sees a strange-looking siu mai, while Shell laughs
uproariously...

expensive if it is made authentically.
